Someone fucked up at the store and marked pork shoulders for 0.07 cent (total not per pound) so I grabbed as many as I could. Ran them for 10 hours at 225 with hickory and post oak. Then finished overnight in the oven at 200.

  8. No wrap? What temp were they at after 10hrs? And then you finished at 200°, what was your finished temp? I usual finish in the oven but wrapped and at 225° till 203° so I’m curious about your cook.
